Corned beef hash

Ingredients:

  • 3 tablespoons butter
  • 1 cup chopped onion
  • 2 cups chopped cooked corned beef
  • 2 cups chopped cooked potatoes
  • pepper to taste
  • chopped fresh parsley

Directions:

Heat butter in a large skillet.  Add onion and cook until soft.  Add corned beef and potatoes, season with pepper.  Mix well and spread evenly in skillet.  Allow hash to brown, do not stir.  Flip sections of hash with spatula and allow to brown on other side.  Sprinkle with parsley and serve with eggs and toast.  Serves 4.
