Homemade meatballs
Time: 15 minutes prep, 30 minutes cooking
Ingredients: 3Tbsp. vegetable oil, 1 pound each ground beef, ground pork, and ground veal (also referred to as “meatloaf mix); 1Tbsp. basil, 1Tbsp. oregano, 1Tbsp. dried parsley, 2 eggs, approximately 1cu. breadcrumbs, 1cu. grated parmesan cheese
Combine all ingredients except the breadcrumbs and oil in a large bowl; mix well. Add breadcrumbs until mixture binds well. Mostien hands with some water and form mix into approximately 1 1/2″ balls. Heat oil in a large skillet. Fry until well-browned, about 7-9 minutes. Remove from skillet and drain on paper towel-lined plates or trays. Serve immediately, or refrigerate and reheat before serving.
Goes well with spicy brown mustard. Serves 15-18.
